A week ago Saturday morning, Karl Norris tossed the icy layer of maple sap from the metal bucket into the snow on the front lawn of his home along South Road in Westhampton. The sun was fading in and out behind the clouds, and a brisk wind whipped across the field. It was a tad chilly, but the sap was running, flowing far faster than he expected.  His youngest son, 16-and-a-half-year-old Austin, bent to take a gulp of the clear liquid straight from the bucket, telling visitors you can taste just a hint of maple if you sample it fresh from the tree.
